Sweet Summer Shortcakes Prep Time: 10 min Total Time: 22 min Makes: 6 servings Ingredients: 1/4 cup sugar 1 qt. strawberries, sliced 2-1/3 cups all-purpose baking mix 1/2 cup milk 3 Tbsp. sugar 3 Tbsp. butter or margarine, melted 1-1/2 cups thawed COOL WHIP Whipped Topping

Directions: PREHEAT oven to 425°F. Add 1/4 cup sugar to strawberries; toss to coat. Set aside. PLACE baking mix, milk, 3 Tbsp. sugar and the butter in large bowl; stir until mixture forms soft dough. Spoon into 6 mounds, 2 inches apart, on ungreased baking sheet. BAKE 10 to 12 minutes or until golden brown. Split shortcakes; fill and top with the strawberries and whipped topping.
