Directions:
In a medium bowl or in the bowl of a standing mixer, combine ricotta cheese and coffee powder; beat on high for 2 minutes. Gently fold in whipped topping.
Spoon 3 tablespoons of ricotta mixture into a parfait glass; top with a layer of raspberries. Repeat layers 3 times and then top with a dollop of ricotta mixture. Repeat with remaining ingredients to yield 4 parfaits.
