Shrimp Salad

side dishes | Despite its long-standing reputation, shrimp salad does not have to be a fattening nightmare. Swap full-fat mayonnaise with the fat-free variety, flavor it up and you've got a classic dish for a fraction of the calories.

Ingredients:
1 pound shrimp, large, peeled and deveined
1/3 cup fat-free mayonnaise
2 medium stalk celery, chopped
3 Tbsp red onion(s), minced
2 Tbsp parsley, fresh, chopped
1 Tbsp capers, drained
2 tsp Dijon mustard
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Directions:

Boil shrimp in a large pot of rapidly boiling water for about 2 minutes, until bright pink and cooked through. Drain, rinse under cold water and drain again; set aside.

In a large bowl, combine mayonnaise, celery, onion, parsley, capers and mustard; mix well. Stir in shrimp; season to taste with salt and pepper. Serve at room temperature or chilled. Yields about 1 1/2 cups per serving. (Note: This preparation method also works well with cooked, cubed chicken breast.)

Using fat-free mayonnaise instead of the full-fat original.

Adding salty capers for additional flavor.
