Soy Tacos with Jack Cheese

Ingredients:
1 serving cooking spray (5 one-second sprays per serving)
1 small onion(s), chopped
2 cup meatless soy crumbles
4 large burrito-size wheat flour tortilla(s), or average-size
1/2 cup shredded reduced-fat Monterey Jack cheese
1 head romaine lettuce, chopped
1 medium tomato(es), chopped
1/2 cup black bean and corn salsa
1 Tbsp cilantro, fresh, chopped

Directions:

Coat a large nonstick skillet with cooking spray. Heat over medium-high heat; add onion. Cook, stirring, until onion is softened, about 2 minutes. Add soy crumbles; cook, stirring, until warm, about 2 minutes. Add salsa; cook, stirring, until heated through, about 2 minutes more.

Warm tortillas according to package directions. Spread 1/4 of soy mixture down the middle of each tortilla. Top each with 2 tablespoons of cheese, 1/2 cup of lettuce and 1/4 of tomato; sprinkle with cilantro. Roll up envelope-style and serve.
